These cookies are amazing, and they are organic, non-GMO, dairy, gluten and grain free! They are crispy and chewy at the same time which is a grain free success story. These are just like the traditional blondie brownie, but in cookie form. Only five ingredients. We roast and cream our own cashews. There is no grain filled gluten free flour mixture here. Nutrient dense with and amazing flavor of toasted creamy organic cashew butter and organic coconut sugar (from the nectar of the coconut flour).

Ingredients for Blondie:
 organic cashews, organic coconut sugar, organic pasture-raised eggs, baking soda, and our own organic fair-trade aged vanilla.

Ingredients for Chocolate Chunk: organic cashews, organic coconut sugar, egg, baking soda, our own grade A aged vanilla, and organic chocolate chips (organic coconut sugar, organic cacao powder, and organic cacao butter).

Our Ingredients: we use eggs from pasture-raised hens, we make our own baking powder, and we age our own vanilla extract.

Story Behind This Cookie: My son, Fulton, with Crohns has always been limited with sweets (what kind and how many). Over the years, we have been able to add some ingredients back into his diet. One of the most recent is coconut sugar. He was so excited to try a cookie that didn't have a soft-bake texture. Once he tried them, he was in love. These cookies are my go-to for him to take to birthday parties or other celebrations where there will be treats he cannot have. Eventually, all the other kids are eating them!
